Made with whole soybeans from Yuzawa, wheat from Akita Prefecture, and coarsely ground sun-dried salt, it uses pure water from Ishimago’s well, a natural spring that has supported brewing for generations.
Artisanal Craftsmanship
Brewed in massive wooden barrels, each with a 4-meter circumference, this soy sauce is aged for over a year in a nationally registered cultural heritage warehouse. Only the first pressing is used, creating a soy sauce rich in umami and full of tradition.
Ingredients: Locally sourced soybeans (Akita Prefecture), wheat (Akita Prefecture), and sun-dried salt.
Aging: Over a year in historic wooden barrels.
Preservative-Free: Naturally brewed without additives.
Shelf Life: 365 days.
Storage: Store in a cool, dark place away from sunlight and humidity. After opening, refrigerate for the best flavor.
Note: A harmless white yeast film (surface yeast or koji mold) may form due to the lack of preservatives. Simply remove it and continue enjoying.
